This simple dinner recipe is a 20-minute meal that's full of protein, healthy carbs, and veggies. This sausage and potatoes skillet is one of my favorite healthy dinner recipes to make because I can cook it in one-pan, the ingredients list is short, and clean-up is quick and easy.

Sausage with peppers, onions, and potatoes is a classic flavor combination and this recipe highlights each ingredient!
- Smoked Sausage or Kielbasa – I prefer to use skinless sausage links because I don't like the chewiness of sausage casings. I grew up eating Eckrich sausage, so that is the brand I use most when cooking smoked sausage.
- Baby Gold Potatoes
- Bell Peppers – Any color of bell pepper will work. I like to use a combination of red and orange bell peppers. Play around with your favorites.

How to Make Smoked Sausage and Potatoes Skillet with Onions and Peppers
First, microwave the baby gold potatoes in a single layer on a microwave-safe plate. Depending on the size of the potatoes, you should microwave them for about 2 minutes on each side.
The baby gold potatoes should be tender and able to easily be pierced with a fork when ready. Microwaving them first will help to soften them and will make pan frying potatoes in a skillet easier.
While the potatoes are still in the microwave, cut the onions and bell peppers into thin strips. You can slice the smoked sausage into coins at this point or wait. To make life easier, I prefer to wait and brown the sausage whole in the skillet before I cut it into slices. Dice the potatoes when they have cooled.
Next, add butter, diced potatoes, onions and peppers to the skillet and cook on medium heat for 10 minutes. Add in garlic, salt and pepper. Stir less frequently if you want the potatoes and veggies to char. When the potatoes, onions, and peppers are tender add the sliced sausage back to the skillet.
Finally, cook all ingredients in the skillet for about 3 more minutes to reheat the sausage and meld all the flavors together. Grab a big bowl and enjoy!
How to Cook Smoked Sausage in a Skillet
Add an inch of water to a skillet. Cook whole sausage links in a skillet on the stove on medium heat for about 8 minutes. Flip the sausage half way through. Once the sausage is browned on all sides, take it out of the skillet and slice into rounds. Set aside.

- 14 oz. smoked sausage (or kielbasa)
- 1 Tablespoon butter
- 1 lb. baby gold potatoes
- 1 red bell pepper, sliced
- 1 orange bell pepper, sliced
- 1 yellow onion, sliced
- 2 cloves garlic, minced
- 1 teaspoon salt
- 1/2 teaspoon pepper

I used red and orange bell peppers for this recipe, but any color will be great. My favorites for this recipe are red, orange, and yellow.
I prefer to use skinless sausage because I don't like the chewiness of sausage casings.
